Tex-Mex Beef & Green Pepper Pizzas with Cheddar

    Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 475 degrees. Sprinkle 3 TBSP of flour over a clean work surface. Remove pizza dough from packaging; place on floured surface. Shape each piece of dough into a ball. TIP: Spray your hands with nonstick cooking spray or coat with flour to prevent sticking. Evenly sprinkle dough balls with 2 TBSP of flour. Cover with a clean towel and let rest at room temperature for ⏱️ 20 minutes .

    While dough rests, wash and dry produce. Core, deseed, and dice long green pepper into small pieces. Zest lime ; for 4 servings, zest one lime and quarter both. Quarter the limes.

    Once dough has rested 20 minutes, line a baking sheet with parchment paper. Carefully press and stretch each dough ball into a rough oval and place on the prepared sheet (use two sheets for 4 servings). TIP: If needed, use a rolling pin to help roll out the dough. Cover with a clean kitchen towel and let rest ⏱️ 15 minutes ; this makes the dough even easier to stretch.

    While dough is resting, heat a large pan over medium-high heat with a drizzle of oil. Add ground beef , chopped long green pepper (from above), fajita spice blend , a big pinch of salt , and black pepper . Cook, breaking up the meat into pieces, until beef is cooked through and the pepper is tender, ⏱️ 4-6 minutes .

    Once dough has rested 15 minutes, use floured hands to press and stretch the pizza dough into larger ovals, about 10 inches long and 5-6 inches wide. Spread each with cream cheese . Top with the beef mixture, then sprinkle with cheddar cheese . Drizzle or brush the edges with olive oil . Bake the pizzas on the top rack until crusts are golden and crisp, 14-18 minutes; if baking two sheets, swap rack positions halfway through.

    While the pizzas bake, mix sour cream with the juice of half a lime and as much lime zest as you like in a small bowl. Taste and season with salt and pepper if desired. Drizzle the baked pizzas with the lime crema and top with salsa . Freshly slice the pizzas, divide between plates, and serve with lime wedges on the side.
